  1. 30ml/2tbsp vegetable oil

  2. 1 onion, sliced

  3. 2 courgettes, finely sliced

  4. 6 large eggs

  5. 75g/3oz Cheddar cheese, grated

  1. Heat the oil in a frying pan, add the onions fry for 2 mins until soft.

  2. Add the courgettes and fry for 4 mins until golden.

  3. Beat the eggs with salt and freshly ground black pepper. Pour the egg mixture into the pan and stir until egg has lightly set. Shake the pan to a level surface and cook for 1 min.

  4. Sprinkle on cheese and cook under a hot grill for 2 mins until golden brown and bubbling. Serve warm with wedges sprinkled with basil leaves, if liked.
