  7. 1 c Shortening

  8. 1 c Flour

  9. 1 Onion, minced

  10. 1/4 c Parsley, minced

  11. 3 Pods garlic, minced

  12. 1/4 c Celery leaves, minced

  13. 1 lb Crawfish tails, cleaned

  14. 8 c Water

  15. 1/2 c Crawfish fat

  16. Seasonings to taste

  17. Make a roux by cooking shortening and flour

  18. together to make a golden brown color while stirring

  19. constantly. Add onions and cook until soft. Add

  20. crawfish fat. Stir constantly while cooking over low

  21. heat until shortening floats on top. Add water and seasonings. Simmer over a low heat for 30 min. About 1/2 hr. before serving, add garlic and crawfish tails

  22. and let simmer for 25 min. longer. Add parsley, green

  23. onion tops, celery leaves and simmer 5 min. longer.

  24. Just before serving, add about 3/4 tsp. file powder,

  25. if desired. Serve in soup plates with hot steamed rice
