  1. Steaks:

  2. 1 tsp. Cajun seasoning

  3. 1 tsp. cayenne pepper

  4. 1/2 tsp. salt

  5. 3 tbsp. canola oil

  6. 784 g each Glaze:

  7. 2 tbsp. minced shallot

  8. 2 tbsp. butter, divided

  9. 1/2 cup bourbon

  10. 1 orangr, peeled, seeded and segmented

  11. 1/4 cup brown sugar

  12. 1/4 tsp. salt

  13. 1/4 tsp. pepper

  14. 1 cup beef broth

  1. For Steaks:

  2. Stir together Cajun seasoning, cayenne, salt and pepper in a small bowl. Rub the spice mixture all over the steaks. Heat oil in a large skillet over medium high heat. Add steaks to the skillet and sear 2 to 3 minutes on each side. Transfer steaks to a baking dish and refrigerate 1 hour. Prepare grill. Grill steaks to desired doneness. Drizzle glaze over steaks and serve.

  3. For Glaze:

  4. Combine shallots and 1 tbsp. butter in a medium saucepan over medium high heat. Cook shallots until browned, stirring frequently. Add bourbon, orange segments, brown sugar, salt and pepper and bring to a simmer. Reduce heat to medium low and stir in broth. Simmer about 45 to 60 minutes until sauce consistency. Whisk in remaining 1 tbsp. butter.
