  1. 2 T oil

  2. 1 medium onion finely diced

  3. 1 green pepper finely diced

  4. 1 can sauerkraut drained & finely chopped (save juice)

  5. 1 large tomato finely diced

  6. 1 cup finely shredded provole cheese salt & pepper to taste

  7. 1 bag corn chip 'scoops'

  1. In a large saute pan heat oil & saute onion & green pepper until soft. Add sausage & cook until brown, chopping finely as it browns. Add sauerkraut. Cover & let this cook for 20 to 30 minutes. Add sauerkraut juice, as needed, to keep moist. Stir in tomatoes & cook another 10 minutes lid off. Salt & Pepper to taste Place 'scoops' on a baking sheet & fill with mixture. Sprinkle cheese over scoops. Set under broiler for 3 to 5 minutes (enough time to melt cheese) Serve hot.
