  1. 4 Swordfish filets - (6 oz ea)

  2. 1 tablespoon 15ml Minced garlic

  3. 1 tablespoon 15ml Minced parsley

  4. 1 tablespoon 15ml Minced fresh thyme

  5. 1 teaspoon 5ml Salt

  6. Freshly-ground black pepper - to taste

  7. 1/3 cup 78ml Olive oil

  8. 1 tablespoon 15ml Grated lemon zest

  1. Rinse the fish and pat dry. Set aside.

  2. Combine the garlic, parsley, thyme, salt, pepper to taste, olive oil and lemon zest in a small bowl. Pour the marinade into a shallow dish. Dip the filets into the marinade, coating each side thoroughly. Let stand at room temperature for about 10 minutes.

  3. Meanwhile, heat a grill pan or grill over medium-high heat. Grill the filets just until the ends start to flake, about 3 1/2 minutes a side. Remove the fish from the heat and cover loosely with foil for about 5 minutes.

  4. This recipe yields 4 servings.
