  7. 1 pk Active dry yeast

  8. 1/4 c Water, warm

  9. 1/4 c Soy or rice milk, scalded,

  10. --then cooled to luke warm

  11. 1/4 c Brown sugar, packed

  12. 1/2 ts Salt

  13. Egg replacer for 1 egg

  14. 1/4 c Applesauce

  15. 1/2 c Quick rolled oats

  16. 2 c Unbleached white flour

  17. --or whole/wheat pastry

  18. "Fruit only" jam or preserve

  19. Dissolve yeast in warm water, in large bowl. Stir in

  20. milk, sugar, salt, egg replacer (mixed with water, as

  21. 1 cup of flour. Beat

  22. until smooth. Stir in enough remaining flour to make

  23. dough easy to handle.

  24. Turn dough onto lightly floured surface; knead until

  25. smooth and elastic, about 5 minutes. Place in bowl

  26. that has been sprayed with nonstick coating. Spray top

  27. of dough with a little more nonstick topping. Cover;

  28. let rise in warm place until doubled, about 1 1/2

  29. hours. (Dough is ready if an indentation remains when

  30. touched)

  31. Punch down dough. Roll dough on a lightly floured

  32. surface into a 12-inch circle. Spread with your

  33. favorite "fruit only" jam or preserves. Cut into 8

  34. wedges. Roll up each wedge, beginning at rounded end.

  35. Place rolls with points underneath on a baking sheet

  36. sprayed with nonstick spray; curve to form crescents.

  37. Let rise until double, about 45 minutes.

  38. 350. Bake for 20 - 25 minutes, until
