  1. 2 lbs Red Skin Potato es

  2. 1/4 cup Chopped Garlic

  3. 1 tbls Oregano

  4. 1 tsp Salt

  5. 1 cup Romano Cheese

  6. 1 cup Softened Butter

  1. Wash the potatoes and place in a large saucepan. Cover with cold water. Over medium heat bring to a boil. Reduce heat and continue cooking until potatoes are tender. Drain the potatoes and put back on heat until the potatoes look dry.

  2. Transfer the potatoes to a large bowl and add garlic, oregano, salt, cheese, and butter and mash until all the ingredients are incorporated and the potatoes are the consistency that you like.
