  1. 1 package Puff pastry

  2. 2 tbs Vegetable oil

  3. 1/2 lb Mushrooms ( oyster , chantrelle, shitake or morel)

  4. 2 Shallot s, chopped

  5. 1 tsp Salt

  6. 1tsp Pepper

  7. 1/4 cup Brandy (or Cognac)

  8. 1 cup Cream

  9. 1 tbs Butter

  10. 1 tbs Tarragon (and/or Chives, Basil)

  11. 3 oz Lemon juice

  1. Bake puff pastries according to directions on package. Add vegetable oil to large skillet. Sautee mushrooms and shallots until soft. Season with salt and pepper. Add brandy and reduce slightly. Add cream and bring to a slight boil. Stir in butter, herbs and lemon juice. Season again with salt and pepper. Top each puff pastry with a generous amount of mushroom mixture and serve.
