  5. 1 ts Unflavored gelatin

  6. 4 c Watermelon cubes

  7. 2 tb Lime juice (or lemon)

  8. 2 tb Honey

  9. Lime twists for garnish

  10. In a micro-safe cup, soften gelatin in 2 tb water by

  11. heating briefly. Stir until gelatin is dissolved.

  12. (Suggestion: cut up melon in a sieve to catch the

  13. seeds, over a bowl to catch the juice or you will have

  14. lots of juice around the cutting board.) In a blender

  15. 1 cup of melon cubes, lime

  16. lemon) juice, honey and gelatin mixture. Cover and blend at high speed for 30 sec or until smooth.

  17. Add remaining melon in batches, cover and blend at

  18. high speed until smooth. Pour into a 8x8x2 pan and freeze until almost firm.

  19. Remove from freezer and transfer mixture to a large

  20. chilled bowl. Beat at high speed with an electric

  21. mixer or food processor until smooth. Return to pan

  22. or pour into serving size cups or pour into plastic

  23. ice cube trays and freeze several hours until firm.

  24. To serve let stand 15-20 min at room temperature.
