  1. 8 Tomatoes

  2. 1 Cucumber

  3. 1 Red onion

  4. 1 Bell pepper

  5. 2 Celery stalks

  6. 5 Jalapeno peppers -- seeded

  7. 4 cups Tomato juice

  8. 3 tablespoons Fresh lime juice

  9. 2 tablespoons Red wine vinegar

  10. 1 1/2 teaspoon Salt

  1. BROTH:

  2. Cut the vegetables in chunks and pulse in a food processor until finely chopped. Combine them with the broth ingredients. Mix, cover and refrigerate until thoroughly chilled.

  3. Serve topped with a dollop of low-fat, plain yogurt.
