  1. 1/3 cup 65g / 2 1/3oz Butter - (to 1/2 cup)

  2. 5 Eggs

  3. 1 1/4 cups 296ml Milk

  4. 1 teaspoon 5ml Vanilla

  5. 1 1/4 cups 78g / 2.8oz Flour

  6. 1 teaspoon 5ml Cinnamon

  7. 1 tablespoon 15ml Sugar

  1. Melt butter in a 9- by 13-inch glass dish or two 9-inch pie plates in a 425 degree oven. Meanwhile, in a medium bowl, mix eggs, flour and milk with a wire whisk. Or use a blender or food processor.

  2. When butter is melted and sizzling, add batter all at once and bake until puffy and golden brown, 20 to 25 minutes. Serve immediately with powdered sugar and lemon juice or with syrup, or try a sweet topping.

  3. This recipe yields 4 servings.

  5. u Apple Raisin Puff: Add 2 cups (about 3 medium) apples, peeled and sliced, 1/4 cup white raisins and 1/4 cup chopped nuts to heated butter. Return to oven for 2 minutes. Watch carefully so butter doesn't burn. Remove, add batter and proceed as above.
