  1. 8 oz cream cheese , room temperature

  2. 1 egg

  3. 2 eggs

  4. 1/2 cup oil

  5. 1/2 cup milk

  6. 1 tsp. grated lemon rind

  7. 2 1/4 cups flour

  8. 1/3 cup sugar

  9. 1/3 cup brown sugar , packed

  10. 1 tsp. baking soda

  11. 1 tsp. salt

  12. 1 cup chopped walnuts

  1. How to make it Combine first 3 ingredients. Beat well and set aside. Beat remaining eggs in bowl until frothy. Mix in oil, milk and rind. Measure remaining ingredients into a separate bowl. Stir to mix well. Pour all at once into egg-milk mixture and stir just until moistened. Spoon 1/2 the batter into a greased loaf pan. Spoon on cheese mixture and cover with remaining batter dropping spoonfuls here and there. Bake at 350 degrees for 1 hour until it tests as being done. Cool 15 minutes in pan before carefully turning onto rack. This is delicious served with a hot cup of tea. NOTE: I hope someone can help me with this. No matter what kind of loaf I make, every time I wait to take it out of the pan, it ends up breaking in pieces or in half so I never have a nice full loaf. Except for my banana loaf. It always holds! Any idea why?
