  1. Black Bean and Rice Salad

  2. 2 cups cooked rice, cooled to room temperature

  3. 1 cup cooked black beans

  4. 1 cup chopped fresh tomato

  5. 1 cup (4 ounces) shredded cheddar cheese

  6. 1 tablespoon chopped fresh parsley

  7. 1/4 cup bottled Italian dressing, or salad dressing of your choosing

  8. Lettuce leaves

  9. Combine rice, beans, tomato, cheese and parsley in large bowl. Pour

  10. dressing over rice mixture; toss lightly. Serve on lettuce leaves.

  11. Makes 4 servings
