  1. 8 thick slices crusty bread

  2. 4 large garlic cloves, minced

  3. 3 tablespoons extra-virgin olive oil

  4. 1/3 cup extra-virgin olive oil

  5. 1 cup grape tomatoes

  6. 1/2 cup chopped green onion s

  7. 10 medium heirloom tomato es of assorted colors, cored, thinly sliced

  8. 1 small red onion , sliced paper-thin

  9. 3 stalks celery , sliced thin on a bias

  10. 1 1/2 cups coarsely crumbled blue cheese

  1. Prepare barbecue (medium-high heat) or oven at 350. Combine minced garlic with 3 tbsp of oil and brush lightly on bread. Combine remaining ⅓ cup oil, grape tomatoes, and green onions in medium bowl; toss to coat. Season with salt and pepper. Overlap hierloom tomato slices in circles on plate. Scatter red onion and celery slices over tomatoes. Sprinkle with salt and pepper. Spoon tomato and green onion mixture over. Sprinkle with crumbled cheese. Grill or toast bread until golden, about 2 minutes per side. Cut each slice diagonally in half; serve with salad.
