  1. 2 pounds fresh green beans

  2. 1 small onion, sliced

  3. 1 garlic clove, finely minced

  4. 1 tablespoon olive oil

  5. 3/4 cup water

  6. 1/2 teaspoon granulated sugar

  7. 1/2 teaspoon salt

  8. 1/2 teaspoon pepper

  9. 1/4 teaspoon dried whole tarragon

  1. Wash beans and remove strings. Leave beans whole or cut in half, if desired.

  2. Saute onion and garlic in oil in a Dutch oven. Add beans, water, and remaining ingredients. Bring to a boil; cover, reduce heat and simmer 20 minutes or until tender. Add additional water, if necessary.
