  1. 1 1/2c Fresh broccoli flowerets

  2. 1/2c Sliced fresh mushrooms

  3. 1/4c Sliced green onion

  4. 1/4c Chopped sweet red pepper

  5. 1 c Diced fully cooked turkey

  6. -ham

  7. 4 lg Baked potatoes

  8. 1/2c Nonfat plain yogurt

  9. 1/4c Skim milk

  10. 2 ts Cornstarch

  11. 1 ts Dijon style mustard

  12. 1 ds Ground nutmeg

  13. 2 tb Grated parmesan cheese

  1. + In a 1 quart microwave safe casserole, combine broccoli, mushrooms,green onion, red peper, and 2 tbsp water.

  2. Cook, covered on high power 3-5 minutes or until vegetables are tender.

  3. Drain well.

  4. Add turkey ham.

  5. cook covered on high 2-3 minutes or until heated through.

  6. Stir together yogurt, milk, cornstarch, mustard, and nutmeg.

  7. Add to broccoli mixture.

  8. cook, covered, on high 2-4 minutes or until mixture is thickened, stirring every 30 seconds.

  9. Spoon over hot baked potatoes.

  10. Sprinkle with parmesan cheese.

  11. Serves 4.
