  1. 1/4lb Margarine, softened

  2. 3/4c Light brown sugar, packed

  3. 1 ea Egg

  4. 2 tb Vanilla extract

  5. 1 c Flour

  6. 1/2ts Baking soda

  7. 1/4ts Baking powder

  8. 1/2c Grated coconut

  9. 1/2c Granola

  10. 3/4c Walnuts, coarsely chopped

  11. 1 3/4c Semisweet chocolate chips

  1. + In large bowl, cream margarine and brown sugar with electric mixer until smooth.

  2. Add the egg and vanilla and beat well.

  3. Let the mixture sit 5 minutes, then beat at high speed for 3 minutes or until very light brown and creamy.

  4. Combine the flour, baking soda, and baking powder in a small bowl, breaking up any lumps.

  5. Stir into creamed mixture, mixing well.

  6. Stir in the coconut, granola, walnuts, and the chocolate chips.

  7. Drop the batter by tablespoonfuls onto a lightly greased cookie sheet about 1 1/2" apart.

  8. Bake in a 350 F oven until lightly browned, about 10 to 15 minutes.

  9. With a spatula, immediately remove cookies from cookie sheet and cool on a wire rack.

  10. Store in an airtight container.
