    1. 4 c Cooked and Mashed pumpkin

    2. 1 (2-ounce) package powdered

    3. pectin

    4. 4 1/2 c Sugar

    5. 1 tb Pumpkin pie spice

    6. 1/2 ts Unsalted butter

    1. Place pumpkin in a heavy kettle.

    2. Stir in pectin.

    3. Place over high heat and bring to a boil, stirring constantly.

    4. Stir in sugar, pumpkin pie spice, and butter.

    5. Continue stirring and bring to a full rolling boil.

    6. Boil hard exactly 4 minutes.

    7. Remove from heat.

    8. Stir 5 minutes.

    9. Ladle into 1/2 pint hot, sterilized jars, leaving 1/4 inch head space.

    10. Adjust caps according to manufacture's directions.

    11. Process 10 minutes in boiling water bath.

    12. After cooling, check seals.

    13. Makes 6 (1/2-pint) jars.
