  1. 8 eggs , lightly beaten

  2. 1 cup(s) cottage cheese

  3. 1/4 cup(s) milk

  4. 1 teaspoon(s) dried oregano leaves

  5. 1/4 teaspoon(s) garlic powder

  6. 1/4 teaspoon(s) salt

  7. 1/4 teaspoon(s) pepper

  8. 1 package(s) (10 ounces) frozen chopped spinach , thawed and well drained 1 1/2 cup(s) (6 ounces) shredded Cheddar cheese or mozzarella cheese

  9. 6 Morningstar Farms® Veggie Sausage Patties

  10. 1/2 cup(s) sliced green onions

  11. 8 cherry tomatoes

  12. 8 fresh parsley sprigs

  1. In large bowl beat together eggs, cottage cheese, milk, oregano, garlic powder, salt, and pepper.

  2. Squeeze excess moisture out of spinach. Stir spinach, Cheddar cheese, patties, and onions into egg mixture. Pour into 13 x 9 x 2-inch baking dish coated with cooking spray. Bake at 325 degrees for 35 to 40 minutes or until set. Let stand 10 minutes before serving.

  3. Cut into squares to serve. Garnish with cherry tomatoes and parsley, if desired.
