  8. 1/2 c Brown sugar

  9. 2 Egg whites

  10. 2/3 c Skim milk

  11. 2/3 c Unsweetened apple sauce

  12. 2 ts Cinnamon

  13. 1/4 c Chopped walnuts

  14. 2/3 c Unbleached flour

  15. 3/4 c Wheat bran

  16. 1 t Baking soda

  17. 1 t Baking powder

  18. 1/2 ts Salt

  19. 3/4 c Old-fashioned oats

  20. Preheat oven to 350*. Lightly coat muffin pans

  21. with non-stick cooking spray. Cream oil and sugar

  22. together until smooth. Add the egg whites, applesauce,

  23. and skim milk, mix well. In a large bowl, combine

  24. flour, wheat bran, baking powder, baking soda, salt,

  25. cinnamon, oats, and walnuts. Pour the creamed mixture

  26. into the dry ingredients, and stir until smooth. spoon
