  1. 1/2 cup chopped onion

  2. 2 tablespoons butter

  3. 1 package (10 ounces) frozen chopped spinach, thawed and well drained

  4. 1 cup cooked rice

  5. 1 can (10-3/4 ounces) condensed cream of mushroom or chicken soup, undiluted

  6. 1/4 cup milk

  7. 2 jalapeno peppers, seeded and chopped

  8. 1/2 teaspoon salt

  9. 1/4 teaspoon pepper

  10. 4 ounces process cheese (Velveeta), cubed

  1. In a large skillet, saute onion in butter until tender. Stir in spinach and rice. In a large bowl, combine the soup, milk, jalapeno, salt and pepper; add to spinach mixture and heat through. Stir in the cheese.

  2. Pour into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until heated through. Yield: 6 servings.
