  6. 8 lg Matjes herring fillets (1lb)

  7. 1 c Buttermilk

  8. 1 c Sour cream (or light sc)

  9. 1/3 c Plain non-fat yogurt

  10. 1 md Onion, finely chopped

  11. 2 md Tart apples, peeled, cored,

  12. .coarsely chopped 2 md Dill pickles, minced

  13. 1 tb Prepared horseradish

  14. 1 tb Fresh lemon juice

  15. 1 tb Sugar

  16. Salt, pepper to taste

  17. 1. Lay the herring fillets in a shallow baking dish.

  18. Add the buttermilk, cover and marinate in the

  19. refrigerator overnight.

  20. 2. On the next day, drain and rinse the herring

  21. fillets well, then cut into bite-size pieces. Place

  22. the herring in a shallow glass or porcelain baking

  23. dish.

  24. 3. Combine the sour cream, yogurt, onion, apples,

  25. pickles, horseradish, lemon juice and sugar. Tast for lemon juice and sugar and add a bit more of each, if

  26. needed. There should be a light lemon flavor and just

  27. enough sugar to mellow the tartness. Season the sauce

  28. to taste with salt and pepper. Spoon over the herring,

  29. cover and marinate several hours in the refrigerator before serving.
