  1. 1/4 cup olive oil

  2. 1 large onion

  3. 2 bell pepper s,

  4. 1 red

  5. 1 yellow

  6. 28 oz can Italian plum tomatoes

  7. 1/2 cup fresh basil leaves

  8. Salt & Pepper

  9. 2 lbs fish , perch is great in this dish

  10. Peel of 1 lemon , thinly sliced strips

  11. 2 Tablespoons lemon juice

  12. 1/2 cup Kalamata olive s

  1. Saute onions and bell peppers in olive oil. Add tomatoes and ½ of the basil leaves, simmer for 6 minutes. Salt and pepper to taste.

  2. Place fish filets on top of tomato/onion. Cover tightly. Simmer medium heat for 10 minutes. Add remaining basil, olives, lemon peel and lemon juice.
