  1. 2 eggs

  2. 3 cups grated, drained potatoes

  3. 4 tblsp grated onion

  4. 1 tsp salt

  5. 1/4 tsp pepper

  6. 2 tblsp crushed crackers

  7. 1/2 cup virgin oil or butter

  1. How to make it Beat the eggs & add the potatoes, onion, salt, pepper & crushed cracker. Heat 1/2 the oil or butter in a frying pan & the potato mixture into it by the tblsp. Fry until brown on both sides. Keep pancakes hot until all are fried, add more oil if required. Can be served plain or with sour cream or any table syrup Serves 8
