  1. 2 1/4 cups all-purpose flour

  2. 1 1/2 cups rolled oats

  3. 1 Tbsp. baking powder

  4. 1/2 tsp. baking soda

  5. 1/2 tsp. salt

  6. 3/4 cup butter, softened

  7. 1 cup sugar

  8. 3 eggs

  9. 1 cup milk

  10. 2 cups cranberries, chopped

  11. 2 Tbsp. sugar

  12. 2 tsp. finely shredded orange peel

  13. 1 recipe Orange Glaze

  1. Preheat oven to 350 F. Grease and flour a 10-inch tube pan; set aside. In a bowl stir together flour, oats, baking powder, soda, and salt; set aside. In a large mixing bowl beat butter with an electric mixer on medium speed for 30 seconds. Add 1 cup sugar; beat until well combined. Add eggs; beat until well combined. Alternately add flour mixture and milk to butter mixture, beating on low speed after each addition until combined. Toss cranberries with 2 tablespoons sugar; fold into beaten mixture with orange peel. Spoon batter into prepared pan; spread evenly. Bake for 50 to 60 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan. Cool thoroughly on rack. Spoon Orange Glaze over cooled cake. Let stand until glaze is set.
