  1. 1 tsp oil

  2. 8 oz beef sirloin, cut in short, thin strips

  3. 2 cans (14 oz each) fat-free chicken broth

  4. 2 cups water

  5. 1 red bell pepper, quartered, cored and sliced crosswise

  6. 3/4 cup sliced carrot

  7. 3 Tbsp light soy sauce

  8. 2 tsp each minced garlic and grated fresh ginger

  9. 8 oz uncooked soba noodles

  10. 1 small bunch (about 12 oz) bok choy, trimmed, cut crosswise in 1-in.-wide pieces

  11. 1/2 cup each sliced scallions and chopped cilantro

  1. Bring a large pot of lightly salted water to a boil.

  2. Meanwhile heat oil in a 4- to 5-qt Dutch oven. Add beef and stir-fry over high heat 3 minutes or until browned. Remove with slotted spoon to a plate.

  3. Add broth, water, bell pepper, carrot, soy sauce, garlic and ginger to Dutch oven. Bring to a boil, reduce heat, cover and simmer 5 minutes or until vegetables are crisp-tender.

  4. Meanwhile stir noodles into boiling water; cook as package directs. Drain and rinse.

  5. Add bok choy to Dutch oven; cover and cook 3 minutes or until vegetables are tender.

  6. Stir in noodles and beef; heat through. Off heat, stir in scallions and cilantro.
