  1. 1 medium eggplant , sliced into 1/2-inch-thick rounds and quartered

  2. 1/4 cup(s) extra virgin olive oil

  3. 2 tablespoon(s) extra-virgin olive oil

  4. 1 teaspoon(s) cumin seed , crushed

  5. 1/4 teaspoon(s) salt

  6. 4 piece(s) flat bread

  7. 1 cup(s) crumbled feta cheese

  8. 1/20 cup(s) kalamata olives , sliced

  9. 1 teaspoon(s) fresh-ground pepper

  1. Make the pizzas: Heat a grill to medium-high heat. Heat oven to 400°F. Combine eggplant, 1/4 cup oil, cumin, and salt in a large bowl, toss to combine, and set aside. Grill the eggplant until just cooked through -- about 8 minutes. Remove from the grill and set aside. Brush both sides of flat breads with remaining oil. Grill the flat bread for 5 minutes. Turn the flat bread over, top with eggplant, cheese, olives, and pepper and grill for 5 more minutes. Transfer pizzas to a baking pan, bake for 8 minutes, and serve immediately.
