  1. 1/3 cup 30g / 1.1oz Shallot - minced

  2. 1/3 cup 20g / 0.7oz Green onion - sliced

  3. 4 cups 948ml Cucumbers - peeled, halved (medium)

  4. Lengthwise, seeded and thinly sliced

  5. 2 Hot red chiles - seeded, halved (small)

  6. 1/2 cup 118ml Rice vinegar

  7. 2 tablespoons 30ml Sugar

  8. 1/2 teaspoon 2 1/2ml Salt

  9. 1/4 cup 4g / 0.1oz Cilantro fresh - chopped

  1. Combine first 4 ingredients in a large bowl.

  2. Combine vinegar, sugar, and salt, and stir well.

  3. Add to the cucumber mixture, tossing to coat.

  4. Stir in the cilantro
