  2. Enchilada Sauce/Chicken Enchiladas

  7. 1 tbsp flour

  8. 1 1/2 tbsp olive oil

  9. 1/2 tsp thyme

  10. 1/2 tsp oregano

  11. 1/4 tsp cayenne

  12. 1/2 tsp cumin

  13. 1 clove garlic -- minced

  14. 1 can chicken broth --

  15. 14 oz

  16. 1 can tomatoe sauce --

  17. 8 oz

  18. 1 tbsp lime juice -- fresh

  19. In large pan saute flour in oil for one minute, add spices and cook for an additional minute. Add broth, tomatoe sauce and lime juice and bring

  20. to a boil stirring constantly till thickened.

  21. Assemble tortillas with chicken and cooked onion, laying side by side in

  22. pan that has been coated with sauce. When pan is full, pour additional

  23. sauce over top, add grated cheddar cheese. Bake in oven til warmed

  24. through and cheese has melted.

  25. Serve on a bed of lettuce and serve with sour cream, salsa and jalapeno
