Pineapple Fruitcake Muffins

    1. 1 c. butter

    2. 2 c. granulated sugar

    3. 4 eggs

    4. 1/2 c. dairy buttermilk

    5. 1 teas. baking soda

    6. 2 c. chopped pecans

    7. 3 1/2 c. flour

    8. 14 oz. pkg. coconut

    9. 3 c. tidbit pineapple, drain and pat dry* --

    10. 1/4 c. pineapple juice or orange juice

    11. 1/4 c. Rum

    12. 1 c. powdered sugar -- note* candied pineapple may be used instead of canned. Still dust with flour with nuts.
