  7. 1 3/4 cups honey

  8. 1 cup clear apple juice

  9. 1 tablespoon lemon juice

  10. 3 ounces liquid pectin

  11. Pariffin

  12. Combine the honey, apple juice and lemon juice in a large pan. Bring the

  13. mixture quickly to a boil over high heat and stir in the liquid pectin.

  14. Bring to a full boil (one that cannot be stirred down) and boil for exactly

  15. 1 minute. Remove from heat and stir. Skim off any foam that appears on the top.

  16. Pour into sterilized jars and seal with a thin layer of paraffin. Store in a

  17. cool dry place.

  18. YIELD: about 3 half-pint jars

  20. heavier-flavored honey, the honey flavor will predominate. If you use a

  21. simple honey (clover honey), the apple flavor will be a little more noticeable.
