  1. 250 ml tomato ketchup

  2. 2 tsp hot pepper sauce

  3. 250 ml soured cream

  4. 8 large wheat flour tortillas

  5. 500g shredded cooked chicken

  6. 300g grated half fat hard cheese

  7. 50g finely chopped red or white onion How to chop an onion video

  8. 1 green or red pepper, diced

  9. 3 tbsp chopped fresh coriander or parsley

  1. Blend the hot pepper sauce and tomato ketchup together.

  2. Mix a third with the sour cream and put to one side.

  3. Spread the rest over the tortillas. Sprinkle tortillas evenly with chicken, cheese, onion, peppers and fresh herbs. Fold over each tortilla.

  4. Heat a non-stick frying pan over a medium heat, add a trickle of oil and wipe around the pan with a kitchen towel. Add two tortillas and cook, turning once, for 3 to 5 minutes or until golden.

  5. Slice into wedges and serve with reserved dipping sauce.
