  2. 1/4 pound marshmallows

  3. 1/4 cup water

  4. 1/4 teaspoon vanilla extract

  5. 2 egg white, dried

  1. Instructions Boil the sugar and water to 240 deg F. Slowly pour the water and sugar over the dried egg whites and beat constantly. Beat occasionally until cool. Cut the marshmallows into four and add them with the vanilla to the water mixture. This makes a light, fluffy icing that will not run from a cake.
