  6. 1 1/2 c Sugar

  7. 3 tb Cornmeal

  8. 2 tb All-purpose flour

  9. 1/4 ts Salt

  10. 4 Large eggs; lightly beaten

  11. 1 ts Vanilla extract

  12. 1/4 c Butter or margarine; melted

  13. 3 1/2 oz Flaked coconut

  14. 15 1/2 oz Can crushed pineapple; very

  15. -well drained

  16. 1 Unbaked 9-inch pastry shell

  17. Combine first 4 ingredients in a large bowl; add

  18. eggs and vanilla, stirring until blended. Stir in

  19. butter, coconut, and pineapple; pour into unbaked

  20. 350 degrees for 1 hour or until

  21. set; covering with aluminum foil after 40 minutes.

  22. Cool on a wire rack. Yield: one 9-inch pie.
