  2. 8 small zucchini

  3. 1/2 pound chopped beef

  4. 1 egg

  5. 2 tablespoons grated parmesan cheese

  6. 2 slices prosciutto -- shredded

  7. 1 thin sliced smoked ham

  8. 1/2 teaspoon salt

  9. 1/2 teaspoon pepper

  10. 1 tablespoon leaf lard

  11. 2 tablespoons butter

  12. 1 small onion -- chopped

  13. 2 tablespoons tomato paste

  14. 1 cup water

  1. With an apple corer remove inside of zucchini, taking care not to break the skin. Mix together the beef, egg, permesan, bread, prosciuto, salt and the pepper. Stuff zucchini with this mixture. Melt leaf lard and butter in large skillet, add onion, parsley and bacon. brown well. Add tomato paste and water and cook 5 minutes. Place zucchini in this sauce. If the sauce is not enough to cover zucchini, add water. Bake in moderate oven (375) bake for 30 minutes.
