  2. FRIED CABBAGE

  6. 1 sm Onion, finely chopped

  7. 6 tb Oil

  8. 1 lg Tomato, sliced

  9. 1/2 ts Salt

  10. 1/2 ts Curry powder

  11. 1 md Cabbage, shredded

  12. 2 ea Carrots, sliced into rounds

  13. 1 ea Green bell pepper, chopped

  14. Over moderate heat, fry the onion in oil until lightly browned,

  15. stirring to prevent scorching. Add tomatoes, salt & curry powder &

  16. continue to stir-fry for 3 minutes.

  17. Add cabbage, carrots & pepper & mix well. Pour in about 1/2 c water.

  18. Cover the pot, reduce heat & simmer until the liquid is abosrbed & the

  19. cabbage is still slightly crunchy. - - - - - - - - - - - - - - - - - -
