  5. --DOUGH--

  6. 2 c All-purpose flour

  7. 3/4 c Hot water

  8. --MO-MO FILLING--

  9. 8 oz Lean ground lamb or beef

  10. 1/2 Onion, finely chopped

  11. 1 c Chopped raw kale

  12. 1/2 c Cilantro, chopped

  13. 1 tb Chopped fresh ginger

  14. 1 tb Sherry, vermouth or brandy

  15. 2 ts Flour

  16. 2 ts Soy sauce

  17. 1/2 ts Cayenne pepper or 1/2 ts Hot chili paste

  18. --KHOTE FILLING--

  19. 2 tb Butter

  20. 1 Chopped onion

  21. 3 Cloves garlic, chopped

  22. 3 Jalapeno Peppers, Sliced

  23. 1 ts Cumin

  24. 1 1/2 ts Curry powder

  25. 1/2 ts Dry ground ginger

  26. 1/2 ts Tumeric

  27. 1 1/2 c Raw broccoli, chopped

  28. 1/2 Red bell pepper, chopped

  29. 1 1/2 c Mashed Baking Potatoes

  30. 1/4 c Chopped cilantro

  31. 2 tb Yogurt

  32. Juice of 1/2 lime

  33. Salt and Cayenne to taste

  34. 1 Bunch Kale to line steamer

  35. Dough: 1. Pour hot water over flour; mix with fork.

  36. When cool enough to handle, finish mixing with your

  37. hands until dough holds together. Wrap in plastic and refrigerate until chilled through.

  38. 2. Work one piece of dough at a time; pinch off a

  39. walnut-sized chunk, shape into a ball, knead several

  40. times, then roll flat on a floured board. 3. Place

  41. dough circle in the palm of your hand; in the middle

  42. of the dough, place about 1 tbsp filling. Bring up

  43. edges and seal at top with little gathers. Leave a

  44. tiny hole at top for steam to escape during cooking.

  45. 4. Line steamer or bottom of skillet with kale leaves.

  46. Top with a layer of dumplings and steam over boiling

  47. 15 to 20 minutes. If using a skillet use just

  48. enough water to cushion the Mo-Mos; replenish water as

  49. needed. Serve immediately, pairing Mo-Mos with soy

  50. sauce, ginger, and vinegar. May also be served with

  51. Achar.

  52. Mo-Mo Filling: Combine all ingredients.

  53. Khote Filling: 1. Melt butter in skillet. Add onion

  54. and garlic and cook over low heat until onion is limp.

  55. Add chiles and spices and cook a minute or two longer.

  56. 2. Add broccoli and red bell pepper. Cook until they

  57. are crisp-tender; then add mashed potatoes, cilantro,

  58. yogurt, lime, and salt and cayenne to taste.

  59. Dipping Sauce for Mo-Mos Yield: 3 Tbsp

  60. 1 Tbsp soy sauce

  61. 1 Tbsp vinegar

  62. 1 Tbsp chile oil

  63. 1/2 inch long

  64. Combine all ingredients.

  65. Achar: Yield: 1 cup

  66. 1/2 onion, chopped

  67. 2 cloves garlic, chopped

  68. 1 Tbsp

  69. 1 tsp Curry Powder

  70. 2 to 3 jalapenos,

  71. 2 to 3 tomatoes, chopped Salt Lime Juice

  72. Saute onion and garlic in oil until onion is soft.

  73. Add Curry Powder, tomatoes and chiles and simmer over

  74. low heat until tomatoes are cooked through and mixture

  75. has a saucelike consistency. Season with salt and lime to taste
