  5. 1/4 teaspoon parsley, minced

  6. 1 clove garlic, minced

  7. 1 teaspoon lemon juice

  8. 1 chicken, split Salt and pepper to taste

  9. 2 cups mashed potatoes, prepared

  10. 3 egg yolks, beaten

  11. 8 large mushroom caps

  1. Instructions Cream together 1/4 cup butter shortening, minced onion, red pepper, green pepper, parsley, garlic, and lemon juice. Place chicken in pan, sprinkle with salt and pepper, dot over with butter, and bake until nearly done in a 375 degree oven. Then grease the plank. Add seasonings to taste and the beaten egg yolks to the mashed potatoes, mixing well. Use potatoes to make a border around the plank. If desired, use a pastry tube and make the designs as fanciful as desired, with rosettes and pyramids. Brush over with beaten egg diluted slightly with water, and place chicken in center. Melt butter and brush chicken. Peel and saute 8 large mushroom caps, place on chicken, place in very hot oven to brown potatoes and finish cooking chicken. Serve on plank at once. .
