  1. 1 1/2 cups yellow cornmeal

  2. 1 cup all-purpose flour

  3. 2 eggs

  4. 3 tablespoons baking powder

  5. 2 tablespoons melted shortening or lard

  6. 1 teaspoon salt

  7. 3 medium chipotle peppers -- finely chopped

  8. 1/2 small yellow onion -- finely chopped

  9. 4 cloves garlic -- minced fine

  10. 3 dried tomatoes -- minced fine

  11. 1/2 cup pork cracklings

  12. 1 1/4 cups beer

  1. Preparation : Combine all ingredients in a mixing bowl and combine thoroughly. Pour mixture into a greased cast-iron skillet. Preheat oven to 450F. Place skillet into oven and bake for 20-25 minutes, or until top is golden brown and toothpick can be inserted into the bread and removed clean. Serve warm.
