  2. INDONESIAN VEGETABLE SALAD

  6. 1 c Cubed, firm tofu

  7. 1/2-in.

  8. -cubes

  9. 2 Stalks celery, cut into -julienne strips

  10. 2 Carrots, shredded

  11. 2 Italian plum tomatoes, cut -into thin wedges

  12. 1/2 Cucumber, thinly sliced

  13. 1 c Fresh bean sprouts

  14. 1 c Broccoli florets

  15. 1/2 c Szechuwan Peanut Dressing

  16. Garnish: raisins, toasted

  17. -sesame seeds, fresh

  18. -watercress sprigs, or -unsalted peanuts, optional

  19. --DRESSING--

  20. 1/3 c Peanut butter, smooth or -crunchy

  21. 1/2 c Hot vegetable stock or hot

  22. -water

  23. 1 t Soy sauce

  24. 2 tb Rice vinegar

  25. 2 tb Safflower oil

  26. 2 Cloves garlic, minced

  27. 1/2 ts Dry crushed red pepper

  28. -teaspoon if you prefer

  29. -spicy flavoring

  30. In a large bowl, gently toss together salad

  31. ingredients.

  32. In a small bowl, combine dressing ingredients. Pour

  33. over salad and toss again. Top with garnish.

  34. Advance Preparation: Both salad ingredients and dressing may be prepared in advance and refrigerated.

  35. For best quality, toss together just before serving.

  37. To cook bean thread, immerse it in boiling water for about 10 minutes to soften. Drain, rinse with cool

  38. water, and cut into 3-inch strands.
