  1. 1 cup 62g / 2 1/5oz Unbleached flour

  2. 1 cup 62g / 2 1/5oz Cornmeal

  3. 1 tablespoon 15ml Baking powder

  4. 1 tablespoon 15ml Mustard - dry

  5. 1/2 teaspoon 2 1/2ml Baking soda

  6. 1/2 teaspoon 2 1/2ml Salt

  7. 2 cups 125g / 4.4oz Skinless boneless chicken

  8. Breast - cooked/chopped

  9. 1 cup 237ml Buttermilk* - at room

  10. 1/4 cup 59ml Applesauce - at room

  11. Temperature

  12. 2 Egg whites - whipped

  13. 2 tablespoons 30ml Honey

  1. Preheat oven at 350. Prepare 12 muffin tins with cooking spray and flour.

  2. In a mixing bowl, combine flour, cornmeal, baking powder, mustard, baking soda, and salt. In a another mixing bowl, combine chicken, buttermilk, applesauce, egg whites, and honey. Mix wet ingredients with dry ingredients just until moistened. Use an ice cream scoop to fill muffin tins 3/4 full.
