  1. 1 small rotisserie chicken

  2. 1 15-oz can black beans, rinsed

  3. 1 cup fresh corn kernels (from 1 to 2 ears)

  4. 4 radishes, cut into 1/4-in. pieces

  5. 2 scallions, thinly sliced

  6. 1 Tbsp fresh lime juice, plus lime wedges for serving

  7. 1 Tbsp olive oil

  8. Kosher salt and pepper

  9. 1/2 cup fresh cilantro leaves

  10. 8 tostada shells

  11. 1 avocado, mashed

  1. Shred the chicken, discarding the skin and bones, and place in a large bowl.

  2. Add the black beans, corn, radishes, scallions, lime juice, oil, 1/2 tsp salt and 1/4 tsp pepper and toss to combine; fold in the cilantro.

  3. Gently spread the tostadas with the avocado. Top with the chicken and black bean mixture. Serve with lime wedges, if desired.

  4. Prep Tip: When cutting corn off the cob, place your cutting board in a rimmed baking sheet to trap wayward kernels.
