  1. Forthe burgers

  2. 2 rashers streaky bacon, chopped

  3. 1 tomato, chopped

  4. 2tbsp Cajun seasoning

  5. 450g extra-lean minced beef

  6. 1tbsp tomato puree

  7. 1 red pepper, deseeded and diced

  8. 2 tomatoes, deseeded and diced

  9. 1 small onion, chopped

  10. 2tbsp tomato ketchup

  11. 1tsp vinegar

  12. 1tbsp parsley, chopped

  13. 4 bagels, halved and toasted

  14. Few rocket leaves

  1. Dry fry the bacon for a few minutes until it is just beginning to crisp. Add the chopped tomatoes and cook for 2 mins. Stir in the Cajun seasoning.

  2. Place the mince in a bowl and add the bacon mixture and puree. Season well and squish the mixture together. Divide into 4 and shape into patties.

  3. Cook on a hot barbecue until thoroughly cooked through.

  4. Meanwhile, make the relish: throw the relish ingredients into a food processor and process for a few seconds.

  5. Serve the burger on a bagel with the relish and salad.
