  1. 1 lb. of baby bella mushroom s or white mushrooms

  2. 1 medium yellow onion , finely diced

  3. 1 tbsp. extra virgin olive oil

  4. 1 clove garlic, minced

  5. 1 tbsp. oregano

  6. 1/2 tsp. thyme

  7. 1 tsp. basil

  8. 1/2 tsp salt

  9. 1/4 tsp. pepper

  10. 3/4 c. breadcrumbs or dry stuffing mix

  11. 1/2 c. parmesan

  12. 2 Tbsp. water

  13. 1/4 c. melted butter

  14. 1 slice swiss cheese , finely diced

  15. 1 c. shredded mozzarella cheese

  1. Preheat oven to 350 degrees. Wash the mushrooms and remove the stems carefully. Spray a 9 in. round or square baking pan with cooking spray and place the mushroom caps in the pan. Finely chop the mushroom stems. Heat the olive oil in a skillet over medium high heat. Add the garlic, mushroom stems and onion. Cook until onions are translucent, approximately 3 minutes. Add spices. Cook another minute. Remove from heat and stir in breadcrumbs, parmesan and water. Spread stuffing evenly over the mushrooms. Top with swiss and mozzarella. Bake for 20 minutes and then broil for 2 minutes until the cheese is brown and bubbly. Let rest for a few minutes and then serve.
