  6. 1/4 c Vegetable oil

  7. 1/2 c Low-fat plain yogurt or 1/2 tb lemon juice in milk

  8. 3/4 c Brown sugar

  9. 1 c Applesauce

  10. 1 ts Vanilla

  11. 1 ts Grated lemon rind

  12. 1/2 c Raisins

  13. 1 c Whole-wheat flour

  14. 1/2 c Natural bran

  15. 1 ts Baking powder

  16. 2 ts Cinnamon

  17. 1 ts Ginger

  18. 1/4 ts Ground nutmeg

  19. 1/3 c Sliced almonds, optional

  20. In large mixing bowl, beat egg; add oil, yogurt, brown sugar, applesauce,

  21. vanilla and lemon/orange rind; mix well.

  22. In another bowl, stir together raisins, flour, bran, baking powder,

  23. cinnamon, ginger and nutmeg; add to wet ingredients and mix only until

  24. combined.

  25. Turn into lightly greased (or wax-paper lined) 8 square cake pan. Lightly

  26. 350 F oven for 45 min or until

  27. tester inserted in center comes out clean. (Squares will be moist.) Let

  28. 25 small squares 1 1/2 inch.
