  1. 1 Broiler-fryer Chicken , cut up

  2. 2 Lemons

  3. 1 Jalapeno Pepper , seeded and minced

  4. 1/2 a Red Onion , diced

  5. 3 cloves Garlic , minced

  6. 1 Tbsp Sage

  7. 1 tsp Sea Salt

  8. 1 tsp Fresh Black Pepper

  9. 3 Tbsp Sugar

  1. Place chicken pieces in large bowl. Squeeze juice from lemons over chicken. Add onion, jalapeno and garlic to chicken. Sprinkle chicken with salt, pepper, and sage. Cover and let marinate in refrigerator at least two hours or overnight, if possible, turning once. Let chicken stand at room temperature for 30 minutes before cooking. Put sugar in skillet over medium heat. When sugar gets lightly brown and just begins bubbling, lift chicken from marinade, reserving marinade. Carefully add chicken to skillet, coating each piece. Once all pieces are browned, add marinade mixture to skillet; lower heat. Let simmer approximately 40 minutes, turning once.
