  1. 16 oz. jar chunky garden salsa

  2. 2 (15 oz.) cans Great northern or cannellini beans, rinsed and drained

  3. 2 cups frozen bell pepper and onion stir fry, thawed

  4. 1 lb. red snapper or grouper fillets, cut into 4 pieces 1/2 cup grated Parmesan cheese

  1. Preheat oven to 425 degrees. Grease 13x9" glass baking dish. Combine salsa, beans and pepper and onion mixture in large bowl. Place in prepared baking dish. Top with fish fillets. Sprinkle fish with Parmesan cheese. Cover dish with foil and bake at 425 degrees for 20-30 minutes or until fish flakes easily when tested with fork. Serves 4
