  1. 2 C diced peeled tart green apple s (such as Granny Smith; about 1 1/2 large)

  2. 1 C sugar

  3. 1/2 C (1 stick) unsalted butter , melted, cooled

  4. 1 large egg

  5. 1 1/4 C all purpose flour

  6. 1 tsp ground cinnamon

  7. 1 tsp baking soda

  8. 1/2 tsp salt

  9. 1/2 C coarsely chopped walnut s

  1. Preheat oven to 375°F. Butter and flour 8x8x2-inch baking pan. Mix diced apples, sugar, butter and egg in large bowl to blend. Sift flour, cinnamon, baking soda and salt over. Add chopped walnuts; mix thoroughly. Pour mixture into prepared pan. Bake until cake is brown and crusty on top and tester inserted into center comes out clean, about 45 minutes. Cool cake in pan on rack.
