  2. CREAMY SQUASH, APPLE, AND CORN BISQUE

  6. 1 lb Acorn or butternut squash

  7. -peeled, seeded and finely

  8. -chopped

  9. 3 Tart apples -- peeled, cored

  10. -and finely chopped 3 tb Unsalted butter

  11. 3 md Leeks -- rinsed well & sliced

  12. 1 cl Garlic -- minced

  13. 4 c Vegetable broth

  14. 1 1/2 c Frozen corn kernels

  15. 6 tb Heavy cream

  16. 1/4 ts Freshly grated nutmeg

  17. 4 Scallions -- finely minced,

  18. -for garnish

  19. Over medium heat, saute the squash and apples in the

  20. butter for 5 minutes, stirring occasionally. Add

  21. leeks and garlic and saute another 5 minutes. Add the

  22. broth and corn and simmer 10 minutes. Stir in the

  23. cream and nutmeg and heat just until warmed through.

  24. Sprinkle with the minced scallions.
