  1. Ingredients :Serves 8-10

  2. 280 g 2 1/2 teaspoons 2 tablespoons 1/2 teaspoon 1 250 ml 1-2 250 ml Flour

  3. Baking powder

  4. Sugar, adding extra as needed for dusting

  5. Salt

  6. Egg, lightly beaten

  7. Fresh milk

  8. Large sweet potatoes

  9. Oil

  1. Sift together the flour, baking powder,sugar and salt in a bowl.

  2. Combine the egg and milk in a separatebowl.

  3. Beat into the flour mixture to form asmooth batter.

  4. Blend in the grated sweet potatoes.

  5. Heat the oil in a wok or frying pan.

  6. Scoop out about 1/4 cup of the batter andfry in hot oil until golden brown.

  7. Remove from the wok and drain on papertowels.

  8. Repeat with the remaining batter, addingmore oil to the pan if necessary.

  9. Dust with sugar if desired.
